Walking Takis Street Corn

This walking Takis street corn recipe is my take on Mexican street corn in a bag of fiery chili-lime Takis. No forks required—finger food at its finest. The corn mixture is a bit bland on its own, but the chile and lime in the Takis make it the perfect combo.

Ingredients

  • 3 ears corn , husks peeled back and silk removed
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon grated Parmesan cheese
  • 1 tablespoon chopped cilantro
  • 1/4 teaspoon freshly ground black pepper
  • 8 (1 ounce) bags flavored rolled tortilla chips, such as Takis® , any flavor

Steps

  1. Heat an outdoor grill over medium-high heat. Grill corn 8 minutes. Flip and grill 8 minutes more. Remove from heat and place on a cutting board.
  2. Whisk mayonnaise, sour cream, Parmesan, cilantro, and black pepper together in a large bowl.
  3. Remove husks from the cob and discard. Cut corn kernels from the cob; stir into mayonnaise mixture.
  4. Open bags of Takis, and divide corn mixture between the bags. Top with extra Parmesan and cilantro if desired. The Takis are your dipping tool. No forks required.
